Yields 4 MetPro Servings Total (One chicken breast per serving)

- 4- 3oz skinless boneless chicken breasts
- Spray cooking oil
- 1 bunch of kale, leaves stripped from the stems and torn into large pieces
- 2 cups marinara sauce
- 4 oz of thinly sliced of fresh mozzarella, total of 1 oz per chicken breast
- sprinkle of freshly grated parmesan cheese
1.) Preheat the oven to 400 degrees and season chicken with salt and pepper
2.) Spray a large frying pan with cooking oil and cook the chicken until golden brown on both sides. Transfer to a plate.
3.) Add the kale to the same pan and saute over medium-high heat until wilted, about 1 minute.
4.) Arrange the chicken and kale in a baking dish and pour marinara sauce over the top of the chicken.
3.) Place two slices of mozzarella cheese over each chicken breast and then top with a sprinkle of parmesan cheese.
5.) Bake until the cheese is golden and the chicken is cooked through (Inside temp of 165 degrees). About 20 mins.
