Chicken Salad Stuffed Avocado

This chicken stuffed avocado recipe is perfect to take to work for a light and refreshing lunch.

Ingredients

  • 2 avocados, pitted
  • 8 oz shredded rotisserie chicken
  • ¼ cup red onion, minced
  • ⅓-½ cup plain, nonfat greek yogurt (depending on desired creaminess)
  • 1-2 tbsp mustard
  • Juice from ½ lemon
  • Salt & pepper to taste
  • Chopped parsley for garnish

Directions

1.) Scoop out the avocados leaving a small border.
2.) Dice the avocado & set aside.
3.) In a large bowl, mix together the chicken, onion, greek yogurt, lemon juice, and mustard. Fold in the diced avocado. Season with salt & pepper.
4.) Divide the chicken salad among the 4 avocado halves. Garnish with parsley.
