Ingredients

  • 6 tbsp (⅜ cup) of dry old fashioned oatmeal
  • ½ cup unsweetened almond milk
  • 6 tbsp (⅜ cup) pure pumpkin puree
  • 0.5 serving vanilla protein powder
  • 2 Tbsp chia seeds
  • ½ tsp vanilla extract
  • ¼ tsp cinnamon
  • Pinch of nutmeg
  • ⅛ tsp ground ginger
  • ½ oz pecans

Directions

1.) In a medium bowl, mix together almond milk, pumpkin puree, and vanilla until well combined. Stir in the oats, chia seeds, and spices. Top with pecans.
2.) Pour into a glass jar or container and place in the fridge for 4 hours or overnight.
