Seitan and Veggie Skewers

Ingredients

  • 3 oz seitan
  • 3 oz sweet potato (diced)
  • 3 oz bell peppers (diced)
  • ¾ oz onion (cut into ½ inch pieces)
  • 1 tbsp olive oil
  • ¼ tsp smoked paprika
  • ¼ tsp garlic powder
  • ¼ tsp black pepper
  • ¼ tsp red pepper
  • Long wooden skewers

Directions

1.) Fire up your grill. In a bowl, mix olive oil, smoked paprika, garlic powder, black pepper and red pepper until well blended.
2.) Add seitan, pepper, sweet potato and onion to the wooden skewers. Using a pastry brush, brush oil mixture onto seitan, sweet potato, peppers and onions.
3.) Grill until browned turning to cook evenly. Enjoy hot.
