- ½ cup brown rice noodles, cooked
- 3 eggs
- 3 oz broccoli
- 1.5 oz carrots
- 2 oz seitan
- 1 ½ cups vegetable broth
- ¼ cup chives
- 1 tsp parsley
1.) Bring vegetable broth to a boil with parsley and chives. After boiling begins, add broccoli and carrots and simmer for 15 minutes.
2.) Crack eggs into broth and allow to cook for 7 minutes. Add seitan and simmer for 5 minutes.
3.) Add cooked rice noodles and simmer for 2 minutes Pour into bowl and enjoy while hot.
