- 3 eggs
- 2 handfuls of shiitake mushrooms
- 1 handful of kale
- ½ tsp minced garlic
- Pinch of crushed red pepper
- salt and black pepper to taste
- Any free foods for toppings- tomatoes
1.) Heat a nonstick pan over medium and spray with a nonstick olive oil spray. Add mushrooms to the pan and saute until they begin to soften and brown, about 2 minutes.
2.) Add kale and saute for another 1-2 minutes. Scramble eggs in a seperate bowl and pour into pan along with garlic and seasonings. Serve when eggs are cooked through and top with your favorite free foods.
